The recipe I want to share with you today is for Baked Fennel Gratin to which I added cherry tomatoes, black olives, and mozzarella. Needless to say, they are delicious. I first blanched the fennel and then baked them with cherry tomatoes, black olives, and mozzarella. This recipe is also suitable for air fryer cooking. A perfect recipe to get everyone to enjoy this delicious vegetable rich in many properties. Fennel is low in calories, digestive, anti-inflammatory, and detoxifying. They are composed of 90% water, rich in minerals such as phosphorus, magnesium, calcium, and potassium. They are rich in fiber and reduce abdominal bloating. Ingredients for Baked Fennel with Mozzarella and Cherry Tomatoes
- 2 fennel
- 10.5 oz cherry tomatoes
- 2.5 oz black olives (pitted)
- 8.8 oz mozzarella
- as needed extra virgin olive oil
- 4 tablespoons breadcrumbs
- 1 tablespoon oregano
- as needed salt
How to Prepare Baked Fennel alla Pizzaiola
Clean the fennel. Remove the tougher base, the green parts, and the outer leaves. Slice the fennel thinly and rinse under running water. Let them cook in boiling water for 10-12 minutes. Test the cooking by piercing them with the tines of a fork; they should soften but not fall apart completely.
Drain and let them cool. Wash the cherry tomatoes and cut them into pieces. Slice the olives into rings. Oil a baking dish and spread half of the cooked fennel at the bottom. Salt.
Spread half of the cherry tomatoes and olives on top. Also add half of the mozzarella cubed. Cover with the remaining fennel.
Salt. Spread the cherry tomatoes, olives, and mozzarella on top. Add a sprinkle of oregano and a drizzle of extra virgin olive oil. Finish with breadcrumbs for a crunchy crust.
Cook the fennel in a preheated oven at 375°F (static mode) for 16-18 minutes. If using an air fryer, let the fennel cook at 365°F-375°F for 14-15 minutes.
