Ingredients for Chicken in the pan with cherry tomatoes
- 1.1 lbs chicken breast
- 9 oz cherry tomatoes
- 7 oz mozzarella
- 1/3 cup flour
- 2 tbsp extra virgin olive oil
- 1 clove garlic
- 1 tsp oregano
- A few leaves basil
- to taste salt
How to prepare Chicken alla pizzaiola
Cut the chicken breast into pieces. You can use slices or a whole piece of chicken breast. Place the flour in a bowl. Add the chicken and, using 2 tablespoons, mix to coat the chicken with flour on all sides.
Pour 3-4 tablespoons of olive oil into a pan and let the chicken brown on all sides over medium heat for a few minutes. Transfer the chicken to a bowl.
Using the same pan, prepare the sauce. Add 2 tablespoons of olive oil and a garlic clove. Also add the washed cherry tomatoes, cut into 2-4 parts. Season with salt and let cook over low heat for 5-6 minutes.
Remove the garlic clove and add the chicken pieces to the pan. Stir for 2-3 minutes over medium heat. Add the oregano and mozzarella cubes. Stir and cover the pan with a lid.
Let the mozzarella melt over low heat for 2 minutes. Stir and serve. Finally, add a few fresh basil leaves if the season allows.
