Ingredients for Preparing Asparagus Rolls

  • 16 asparagus
  • 8 slices speck
  • 4 slices emmental
  • 1 egg
  • as needed breadcrumbs
  • as needed salt
  • as needed extra-virgin olive oil
  • 3 quarts water

Steps for Preparing Asparagus Rolls

To prepare the rolls, start by removing the tough stem part of the asparagus, leaving only the tender part, and wash them well under running water.

  • In the meantime, fill a pot with plenty of water, bring it to a boil, and add salt. Then cook the asparagus for about 10-15 minutes. Once cooked, drain them and let them cool completely.

    Then, on a surface, lay down two slices of speck and one slice of emmental, as in the photo, and then place 4 asparagus, leaving the ends out.

  • Next, wrap the asparagus by rolling the speck around them.

  • Then, in a plate, beat an egg with a fork and a pinch of salt, and in a second plate, place some breadcrumbs. Dip the rolls, one by one, into the egg and coat them with breadcrumbs.

  • Once ready, place them in the basket of the air fryer lined with parchment paper, spray with extra-virgin olive oil and bake at 356°F for 10 minutes. Halfway through the cooking, turn them over, spray a bit more oil, and finish cooking.

    After the time has elapsed, remove from the oven and serve hot, so you can enjoy them crispy on the outside and creamy inside. And… enjoy your tasting!

Notes and Tips

Asparagus rolls can be stored in the fridge for two days, and before serving, they need to be warmed up for a few minutes in an air fryer or oven.
