Ingredients for the Extremely Soft Castagnole

  • 1 egg
  • 6.35 oz ricotta
  • 2.12 oz sugar
  • 1.27 cups flour
  • 2.47 oz raisins
  • 1/2 orange zest (untreated)
  • 1 tsp baking powder
  • to taste powdered sugar (for decoration)
  • 1.5 cups vegetable oil (for frying)

How to Prepare Raisin Castagnole

  • First, soak the raisins in a small bowl with hot water until they soften. Mix the egg with the sugar in a bowl. Add the ricotta and simply mix with a fork.

  • Add the drained raisins, grated orange zest, sifted flour, and baking powder. Mix well to combine all the ingredients. You should get a soft and creamy batter.

  • Heat plenty of vegetable oil in a small, deep pan or a small saucepan. Now, with the help of 2 spoons, drop small portions of batter into the boiling vegetable oil.

  • Let the Raisin Fritters brown on all sides. Remove them with a slotted spoon and let them drain on paper towels.

  • Let them cool and dust them with plenty of powdered sugar.
