Stuffed onions are one of those dishes you can’t stop eating. I love any type of stuffed vegetable; each one, like peppers, tomatoes, and zucchini, imparts their flavor to the filling. And in my opinion, the taste of onions makes them particularly appetizing.
This is a simple and humble recipe, passed down by my mom, and I assure you that prepared this way, they are truly delicious.
I would love for you to taste them to understand their goodness. My guests always give me many compliments when I serve them at the table. And to think that preparing them is really easy.
They can be served as an appetizer, side dish, or even as an aperitif dinner.
I also recommend the delicious
stuffed tomatoes and
the fantastic stuffed artichokes or
the cabbage rolls.
Additionally, you can serve them accompanied by roasted peppers which are very tasty and with a good homemade bread or with crunchy Taggia canestrelli.

Ingredients
- 6 carrots
- 6 medium potatoes
- 3 light zucchini
- 1 cup grated Parmesan cheese
- to taste salt
- 3 onions
- to taste extra virgin olive oil
- 7 oz ground sausage
- to taste majoram
- to taste bread crumbs
- to taste sesame seeds
Preparation Tools for Stuffed Onions

Steps for Preparing Stuffed Onions
To prepare the delicious stuffed onions, we start by cleaning the vegetables.
In the meantime, put some water to boil in our steamer pot. Meanwhile, cut the carrots, then the potatoes, and then the zucchini into pieces and, in this order, place them in the steamer basket and cook. It will take about 20 minutes, but always test with a fork to check doneness. Please, make sure the carrots are at the bottom as they take the longest to cook, the potatoes in the middle, and finally, the zucchini, which cooks the fastest. While the vegetables are cooking, use a spoon to open the onions and set them aside.
Once the vegetables are cooked, mash them with the potato masher and place them in a bowl.
Next, add the grated Parmesan, the sausage meat, then the salt and finally a drizzle of extra virgin olive oil and finish by mixing everything well with a fork.
Then, generously stuff each onion and sprinkle with black sesame seeds. Finally, place them on a previously greased and salted baking tray. Finish by baking them at 350°F for about 30 minutes in a static oven.
Once cooked, take them out of the oven and serve hot… enjoy!

Storage and Notes
Stuffed onions can be stored in the fridge for two days, and they can also be frozen. In summer, they are excellent served cold.
