Preparing the lentil meatballs is very easy, you will need a blender and very few ingredients. In less than half an hour, we will have a tasty, flavorful, yet very light dish, thanks to the cooking in the air fryer.
We can offer them also for lunch or dinner, they are a perfect main course to accompany with vegetable or potato sides.
Cooking in the air fryer makes them crispy on the outside and very soft inside.

Ingredients

- 14 oz canned lentils
- 1/3 cup breadcrumbs
- thyme
- rosemary
- salt
- pepper
- extra virgin olive oil
- breadcrumbs (for the breading)

Let’s start preparing
Let’s start preparing the lentil meatballs: first, drain the lentils from their can and place them in a colander. Rinse them under running water and let them drain well.
Pour the cooked lentils into a blender and blend. Add the breadcrumbs, spices, salt, and pepper and mix well; you should get a mixture that is easy to work with and not too sticky.
Using a spoon, scoop portions of the mixture and shape into meatballs of your preferred size. Arrange them on a tray and then roll them in a plate with breadcrumbs until fully coated.
Place the meatballs in the air fryer basket, spaced slightly apart, spray with olive oil spray, and cook at 356°F for 10 minutes.
The lentil meatballs in the air fryer are ready.
