A light leavened dough because it’s without butter and very simple to prepare with my step-by-step explanations. What could be better in the morning than waking up to find my very soft Nutella brioche waiting for us at breakfast and a cup of hot milk or tea, and our day will surely be wonderful! A soft and light dough, without eggs and without butter, which I then filled with the hazelnut cream we all love. I added a jar of plain yogurt to the dough which I love to add to sweets because it makes them particularly soft and gives them a special tenderness. I filled and rolled the dough to form Soft Nutella Swirls. In an instant, my entire house was filled with a delicious aroma, and it was impossible not to try one immediately while still warm. Ingredients for Soft Yogurt Brioche
- 1 2/3 cups all-purpose flour
- 3/4 cup Manitoba flour
- 1/2 cup plain yogurt
- 0.21 oz fresh yeast
- 3.5 tbsp milk
- 1/4 cup sugar
- 1/4 cup vegetable oil
- 1/2 orange zest (untreated)
- 1 cup Nutella®
- 3/4 oz chopped hazelnuts
- 1 2/3 tbsp milk (for brushing the brioche)
How to Prepare Soft Nutella Swirls
You can prepare the dough by hand or with the help of a mixer. Dissolve the fresh yeast in the warm milk. Add the plain yogurt and mix. Add the sugar, honey, and grated zest of half an untreated orange.
Continue the preparation by adding the all-purpose flour and Manitoba flour. Mix. Add the vegetable oil and mix well. Knead thoroughly until you have a soft but non-sticky dough.
Transfer the dough to your work surface, simply stretch it with your hands and roll it on itself. Repeat this operation 3-4 times. Form a dough ball and place it in a floured bowl. Cover with plastic wrap and let it rise in a warm place for about three hours.
Take the dough and roll it out on a lightly floured work surface to form a large rectangle about 0.4-0.5 cm thick. Spread the hazelnut cream over half of the surface using a spatula. Fold the empty half of the dough over the part covered with cream.
Gently roll over it with a rolling pin to slightly compact the dough. Cut strips about 2 cm wide. Roll each strip onto itself and then form a swirl by creating a spiral from the center outward. Prepare all the Brioche in the same way and place them slightly spaced apart on a baking sheet lined with parchment paper as you prepare them.
I got 10, but it depends on how thick you roll the dough. Brush them with milk and decorate with chopped hazelnuts or simply sugar crystals. Let them rise for about an hour in a warm place. Preheat the oven to 375°F.
Bake the Soft Swirls with Hazelnut Cream in the preheated convection oven for about 18-20 minutes. Let them cool and, if desired, sprinkle with powdered sugar.
