It’s often veeeeery convenient to have a nice package of ready fresh pasta in the fridge. You don’t always have the time (or the desire) to make it from scratch, right? However, let’s not just limit ourselves to dressing it with melted butter and sage. Come on! I’m about to suggest a super simple, super quick recipe that will help you out. They are small potato dumplings with gorgonzola and bacon that are truly super delicious. What are these dumplings? They’re small potato gnocchi that cook in no time. In this recipe, the dressing is very tasty and you’re sure to like it. Shall we bet? In short… speed, goodness, simplicity. What more could you ask for?

Ingredients for Pasta Dumplings with Gorgonzola
- 1.1 lbs fresh dumplings (or small gnocchi)
- 5.3 oz smoked bacon (diced)
- 5.3 oz gorgonzola (mild)
- 3 tbsp milk
- 2 sprigs thyme
- salt
- black pepper
Tools
- 1 Pan
- 1 Pot
- 1 Slotted spoon
Preparation of Pasta Dumplings with Gorgonzola
First, heat a large pan (or skillet) well and brown the bacon WITHOUT any seasoning.
When it becomes crispy, add the mild gorgonzola in pieces and the milk.
Let the cheese melt over low heat, then season with a grind of black pepper and some thyme leaves.
Meanwhile, cook the dumplings in plenty of salted boiling water until they float to the surface. Drain them with a slotted spoon and transfer them directly into the sauce pan.
Gently mix them to combine all the ingredients well.
Serve the pasta dumplings with gorgonzola on individual plates, sprinkle with freshly ground black pepper and serve immediately, piping hot. Enjoy! Paola
