I baked my Meatballs in the oven, but they can also be cooked in the air fryer or, if you want to indulge, you can fry them. Ingredients for Potato Croquettes

  • 21 oz potatoes
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • to taste extra virgin olive oil
  • 1 bunch parsley
  • to taste salt
  • 2.8 oz diced cooked ham
  • 6.3 oz scamorza cheese

How to prepare Potato Meatballs in an air fryer

  • First, peel the potatoes, wash them, and cut them into pieces. Let the potatoes cook in water for about 25-30 minutes. The cooking time for potatoes depends on their quality and size, so test the doneness by piercing them with a fork.

  • Drain the potatoes, transfer them to a bowl, and mash them with a potato masher. Add a pinch of salt, the grated parmesan cheese, and chopped parsley.

  • Add 3 tablespoons of breadcrumbs and mix well using just a fork. Divide the cooked ham and scamorza, or another soft and melting cheese, into small pieces.

  • Take a handful of the mixture and flatten it between your hands. Place a few cubes of cooked ham and scamorza in the center and carefully close to form the Potato Meatball.

  • As you prepare them, roll them in breadcrumbs on all sides. Arrange them on an oiled baking sheet. Lightly oil the surface and let them cook in a hot oven at 392°F for 16-18 minutes.

If any Croquettes are leftover, store them in a container in the fridge for 1-2 days. Just reheat them for a few minutes in a hot oven or microwave
