Ingredients for Preparing Baked Rice and Potatoes
- 10.5 oz potatoes
- 10.5 oz Carnaroli rice
- 1 onion
- 1 qt vegetable broth
- 3 tbsp extra virgin olive oil
- 1 tbsp triple tomato paste
- 1 tbsp chopped parsley

Steps for Preparing Baked Rice and Potatoes
Peel the potatoes and, after washing them, cut them into small pieces. Coarsely chop half an onion and cook it in a pan with a drizzle of oil and a little water. Add the potatoes and rice, and after flavoring, deglaze with hot vegetable broth. Add the tomato paste, mixing well.
Cook rice and potatoes by gradually adding the hot broth, keeping the cooking slightly underdone as it will finish in the oven. Remove the rice from the heat and add Parmesan and butter, mixing well. Scent with rosemary.
Cut the cheese into chunks. Add it to the rice. Pour into a lasagna pan that you have greased with extra virgin olive oil. Enrich with Parmesan and a drizzle of oil. Bake at 356°F, static, for 20-30 minutes. Serve the rice hot and still cheesy.
Storage
You can store the rice in the fridge for two or three days. You can also prepare it in advance and gratin at the last minute.
