Potato Croquettes without Eggs
A tasty appetizer that we can enjoy any day, from a simple Monday to Easter lunch (for example)! Croquettes made with potatoes, cheese, and mozzarella then coated in breadcrumbs but without eggs. For cooking, I chose to fry them, but if you prefer a lighter version, you can also bake them or use an air fryer. Potato croquettes are a staple in the classic Italian fried appetizer.

Ingredients for Potato Croquettes without Eggs:
- 1.1 lbs potatoes
- 1.75 oz cheese (Grated)
- 3.5 oz mozzarella
- cup water
- cup flour
- as needed breadcrumbs
Steps

Boil the potatoes, drain them and then mash them. Add a pinch of salt, turmeric, and mix.
Add the cheese, mix, and let cool. Once the mixture is cool, take some with your hands and shape it, placing a piece of mozzarella in the center to form the croquette.
Continue until the mixture is used up. Place them in the fridge/freezer for about an hour.
In a bowl, mix the flour, a bit of salt, and water. Dip the croquettes first in the batter, then in breadcrumbs.
You can either bake them or fry in hot oil for a few minutes.
