Spaghetti with pumpkin super creamy and delicious. The recipe I want to tell you today is for a first course with pumpkin in a very creamy version with the addition of stracchino. A simple recipe to make everyone eat pumpkin, even those who don’t like it too much, but that’s not really my case! I cut the pumpkin into small cubes and simply cooked it in a pan and then blended it. A soft pumpkin cream with the addition of stracchino wraps the pasta making it irresistible. - 11.3 oz spaghetti
- 14.1 oz pumpkin
- 5.3 oz stracchino
- 4 tbsps extra virgin olive oil
- 1.4 oz pistachios
- 1.4 oz Grana Padano cheese, grated
- 1 white onion (medium)
- to taste salt

How to prepare Spaghetti with pumpkin cream
Clean the pumpkin by removing the skin, seeds, and internal filaments. Cut it into small cubes. Pour 3 tablespoons of extra virgin olive oil into a large pan, add the thinly sliced onion and pumpkin. Season with salt and cook over medium heat for 8-10 minutes. Stir often with a wooden spoon, adding a few tablespoons of water after a few minutes of cooking.
While the pumpkin is cooking, cook the spaghetti or another type of pasta in plenty of salted water. Transfer the pumpkin to the glass of an immersion blender and blend until obtaining a soft orange cream. Pour the pumpkin cream back into the pan. Add the grated cheese and stracchino.
Stir. Drain the pasta al dente, keeping a little of the cooking water aside. Put the pasta directly into the pan with the sauce. Also add 2/3 of the coarsely chopped pistachios and stir. If needed, add a little of the cooking water to make the dish creamier. Serve the Spaghetti with pumpkin cream, decorating the plates with pistachios.
