Ingredients for Carrot and Almond Cookies

  • 1 1/3 cups carrots
  • 1/2 cup almonds
  • 1 egg
  • 2/3 cup sugar
  • 1/2 cup butter (softened)
  • 3/4 cup flour
  • 1/2 packet baking powder (8 grams)
  • 1/2 teaspoon ground cinnamon
  • as needed powdered sugar (for decoration)

How to prepare Carrot and Almond Cookies

  • Peel the carrots, cut them into pieces and place them in a mixer or blender. Also add the almonds and blend. Beat the egg with the sugar using a whisk or even a fork.

  • Add the blended carrots and almonds and mix. Now add the softened butter in small cubes and mix with a spatula to blend it into the dough. Finish the preparation with cinnamon, sifted flour, and baking powder.

  • Mix well with the spatula; the dough will be soft. Cover the bowl with plastic wrap and let the dough firm up in the fridge for 30 minutes, this way it will be easier to shape the cookies later.

  • Take the dough and shape the Cookies. Roll a ball of dough between your hands and place them slightly apart on a baking sheet lined with parchment paper. Prepare all of them.

  • Dust the cookies with powdered sugar. Bake the Soft Carrot Cookies in a preheated static oven at 356°F for 14-16 minutes. Let them cool before transferring them to a tray.
