CHICKPEA AND PUMPKIN HUMMUS

The Chickpea and Pumpkin Hummus is very simple to prepare. It originally started with just chickpeas, but lately, you can find it in various flavors. Today I tried adding some pumpkin I had lying around… well, everyone at home loved it! Try it with Pita or Flatbreads, it’s excellent as an appetizer or starter.

Here are the recipes for Flatbread and Pita, as well as the classic chickpea hummus

Ingredients for Chickpea and Pumpkin Hummus

  • 2 cups pumpkin (butternut or delica)
  • 1 cup canned chickpeas (drained weight)
  • 3.5 tbsp tahini
  • 3.5 tbsp extra virgin olive oil
  • 1.5 tbsp lemon juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tsp smoked paprika
  • 1 clove garlic

  • 1 Kitchen Robot Bimby TM31 – TM5 – TM6
  • 1 Blender
  • 1 Steamer for microwave
  • 1 Baking Tray
  • 1 Bowl

Preparation of Chickpea and Pumpkin Hummus

  • First, we need to clean and cook the pumpkin, then cut it into pieces and cook it. Now we can choose whether to use THE BIMBY: Place 500g of water in the bowl and place the basket inside with the pumpkin pieces. Close with the lid. Cook for 20 minutes at Varoma speed 1. Set aside to cool. Empty and dry the bowl.

  • Or WITHOUT BIMBY: Steam the pumpkin, using the microwave, or a pressure cooker or a pot. (the microwave with “steam” cooking for 5 minutes) Or bake it in the oven, at 392°F (200°C) static for 30 minutes. Check the cooking by using a fork. If it goes through the pumpkin without too much effort, it’s ready.

  • WITH BIMBY: Put in the clean bowl the chickpeas, cooked pumpkin, tahini, lemon juice, garlic, salt, pepper, paprika, and oil. With TM6, select “blend” and set 50 seconds. With other Bimby models (TM5 and TM31), blend at speed 6 for 1 minute (increase by a few seconds if necessary)

  • WITHOUT BIMBY: Put in the blender the chickpeas, cooked pumpkin, tahini, lemon juice, garlic, salt, pepper, paprika, and oil. Activate and blend everything until you get a smooth and lump-free cream.

NOTES

It keeps in the fridge for 3-4 days, covered with a bit of oil and plastic wrap.
