Ingredients for the Puff Pastry Pie with Potatoes and Speck
- 1 roll puff pastry (rectangular)
- 1.5 lbs potatoes
- 5 oz speck
- 7 oz mixed cheese (in slices)
- 1.5 oz grated parmesan
- to taste extra virgin olive oil
- to taste salt

- Slicer for vegetables
How to prepare the Puff Pastry Pie with Potatoes and Speck
Peel the potatoes. Wash them and with the help of a vegetable slicer or mandolin slice them into thin slices. Roll out a rectangular roll of puff pastry in a rectangular baking pan lined with parchment paper. The pan I used measures 12 x 10 inches.
Pierce the puff pastry with the teeth of a fork. Distribute half of the potato slices on top, slightly overlapping them. Cover with speck slices and then with slices of caciotta or another soft, melty cheese, such as both white and smoked scamorza.
Finish by distributing the remaining potato slices, always slightly overlapping them over the entire surface. Salt and pepper. Don’t overdo it with the salt, because between the speck and Parmesan, the savory pie is already flavorful.
Sprinkle the potatoes with grated Parmesan and drizzle with a bit of extra virgin olive oil. Fold the puff pastry all around.
