Delicious and special Halloween cookies. Halloween, the spookiest holiday of the year, is just around the corner. Even though it’s not my favorite holiday, it’s always the perfect excuse to make a special treat. Today I want to share with you the recipe for delicious shortbread cookies filled with berry jam with a cute and peculiar monster face… but not too scary! They are very simple to make, and you can get help from the little ones at home. For the filling, I used berry jam, but you can also use another flavor, or replace it with chocolate cream or Nutella. For the shortbread, I used a particularly crumbly and soft recipe by adding some rice flour to the dough, but if you prefer, you can use only all-purpose flour. The addition of half a teaspoon of baking soda makes the dough soft and light. To prepare the cookies, you only need a round cookie cutter, but you can also use a glass, cup, or jar. To decorate with melted chocolate, I’ll leave you the link to a decorating pen that I use, but you can also use a paper cone. Have I convinced you to try them? Ingredients for Cookies with Jam and Chocolate
- 1 2/3 cups all-purpose flour
- 3/4 cups rice flour
- 1/3 cups butter
- 1 egg
- 2/3 cups sugar
- 5 tablespoons water (cold)
- 1/2 lemon zest (untreated)
- 1/2 teaspoon baking soda
- 7 oz berry jam
- 2 3/4 oz dark chocolate

How to Make Halloween Cookies
You can prepare the dough by hand or with the help of a mixer. Mix the all-purpose flour with the rice flour in a bowl. Add the sugar, baking soda, and the grated zest of half an untreated lemon.
Add an egg, the butter in small pieces, and the cold water. Knead well and quickly until you have a soft but not sticky dough. If the dough is still too dry and crumbly, add 1-2 more tablespoons of cold water.
Form a dough ball, wrap it in cling film, and let it rest in the fridge for at least 30 minutes. You can also prepare the shortbread the day before and store it in the fridge.
Roll out the shortbread on a lightly floured work surface and cut out the cookies with a cutter or glass. Arrange them side by side on a baking sheet lined with parchment paper. Using the nozzle of a piping bag, a pen cap, or the handle of a wooden spoon, make two small holes on half of the cookies to simulate eyes.
Bake the Halloween Cookies in a preheated oven at 350°F in static mode for 14-16 minutes. They should just turn golden without getting too dark. Let them cool. Spread a teaspoon of jam on the cookies without holes. Cover with another cookie, pressing lightly to make the jam ooze out of the holes.
Melt the dark chocolate in a double boiler. Put the melted chocolate in a decorating pen or make a small cone with parchment paper. Decorate the Cookies with melted chocolate by drawing a monster mouth and a small dot for the nose. Let the chocolate dry in the air for about an hour.
