Ingredients for Pan-fried Tofu Burgers
- 8.8 oz tofu
- 1 zucchini
- 2 carrots
- 1 onion
- to taste salt
- to taste pepper
- to taste curry
- 2 tbsp breadcrumbs
- 10 cherry tomatoes
- to taste salt
- to taste pepper
- 1 tsp sugar
- to taste dried oregano

Steps
To prepare the pan-fried tofu burgers, start by cutting the tofu into cubes and let it drain for at least 10 minutes.
Dice an onion as well,
the carrot,
a zucchini.
In a pan, sauté the onion with a drizzle of extra virgin olive oil,
add the carrot cubes,
the zucchini and
the tofu and
cook covered for about 10-15 minutes on low heat.
Transfer everything to a bowl,
adjust the salt and pepper,
add the curry,
The breadcrumbs and
blend everything with an immersion blender.
Mix with a spatula and refrigerate for 30 minutes covered with plastic wrap.
Meanwhile, in the same pan, add a drizzle of extra virgin olive oil, the halved cherry tomatoes,
adjust with salt, pepper,
also add the dried oregano, sugar and
let them caramelize, stirring occasionally, and set aside.
After the resting time, take the mixture out of the fridge.
With a spoon and a pastry cutter, shape the burgers
not too thick and
cook them in a pan with a drizzle of oil.
