Tasty and flavorful stuffed zucchini with sausage. Another simple and delicious recipe with my beloved zucchini: Baked Stuffed Zucchini with Sausage. I found some very tender small light zucchinis from my trusted greengrocer, and I immediately thought of making them stuffed. I chose a rich and flavorful filling with sausage, bread crumbs, and grated cheese. For cooking, I used the air fryer, but a classic oven cooking is also fine. Ingredients for Meat Stuffed Zucchini
- 1.1 lbs zucchini
- 10.5 oz sausage
- 2.5 oz breadcrumbs (from bread)
- 1.8 oz Grana Padano cheese, grated
- to taste extra virgin olive oil
- 1 sprig mint
- to taste salt
- 1 pinch pepper
What You Need

How to Prepare Stuffed Zucchini
Wash the zucchini. Cut them in half lengthwise. Using a corer or simply a knife and a teaspoon, hollow out the inside of the zucchini. Chop the zucchini flesh into small pieces.
Salt the inside of the zucchini. Place the zucchini in an oiled baking dish. Bake the zucchini shells in a preheated oven or air fryer at 375°F for 10-12 minutes.
Remove the casing from the sausage. Mix it in a bowl with crumbled bread crumbs, grated cheese, and zucchini flesh. Add a pinch of salt, a pinch of pepper, and some fresh mint leaves. Mix.
Retrieve the zucchini shells and fill them with the mixture using a teaspoon. Add a drizzle of extra virgin olive oil and let the Stuffed Zucchini cook in the hot oven at 375°F for 22-24 minutes. If using the air fryer for cooking, reduce the cooking time to 18-20 minutes.
