- 0.42 cup fresh liquid cream
- 2 tablespoons grated Parmesan
- 1 pinch salt

Preparing the Bologna mousse is really childproof, it can be prepared in just a few minutes and all you need is a mixer.
First of all, let the ricotta drain well in a strainer and once well dried, collect it in the mixer bowl.
Then cut the bologna into chunks (or strips if you are using slices) and place it in the mixer and start blending.
After a few seconds, when the bologna is minced and mixed with the ricotta, also add the cold fresh cream from the fridge, Parmesan, and a pinch of salt.
Turn the mixer on again and continue blending until you get a smooth, homogeneous, and fluffy cream.
Then transfer the Bologna mousse into a bowl, garnish it with chopped pistachios, and store it in the fridge until ready to use 😉.
