Pasta with Bacon and Cherry Tomatoes

It’s really a piece of cake to prepare this pasta with bacon and cherry tomatoes. The ingredients are few and all very easy to handle but the result is truly appetizing. A main dish suitable for everyday cooking. Prepare it and you’ll see that everyone will be happy.

Ingredients for Pasta with Bacon and Cherry Tomatoes

  • 12 oz short pasta (any shape)
  • 5 oz smoked bacon (diced)
  • 10.5 oz cherry tomatoes
  • 1 clove garlic
  • 3.5 oz robiola cheese
  • 2 tbsp milk
  • A few leaves basil
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Pasta with Bacon and Cherry Tomatoes

  • Heat a small skillet very well, then add the diced bacon and brown it well without any seasoning until it is golden and crispy.

  • Then collect it with a slotted spatula and transfer it onto a plate lined with paper towels. Pat it to remove excess grease.

  • In a pan, heat a few tablespoons of oil and sauté a peeled and whole clove of garlic. Let it sizzle for a few moments, then add the cherry tomatoes and sauté them for a few minutes, stirring occasionally.

  • Place the robiola cheese in a small bowl with the milk, a generous pinch of salt, and a grind of black pepper, and mix until you get a smooth cream.

  • Meanwhile, cook the pasta in plenty of salted boiling water, drain it al dente, and transfer it to the pan with the cherry tomatoes. Remove the garlic.

  • Add the robiola cream and mix to combine all the ingredients. Finally, add the crispy bacon. And here I forgot to take pictures.

  • Distribute the pasta with bacon and cherry tomatoes on individual plates and, before serving, sprinkle it with freshly ground black pepper and garnish with basil torn by hand. Enjoy! Paola
