Ingredients

- 20 ladyfingers
- 1 cup sweetened vegetable whipping cream
- 1 cup mascarpone
- 7/8 cup coconut milk (or soy, or whole milk)
- 2 oz shredded coconut

Let’s start preparing
Let’s start preparing the coconut tiramisu; pour the vegetable cream into a large bowl, whip the cream to stiff peaks with the help of the beaters.
Add the mascarpone and continue to whip.
Add two tablespoons of shredded coconut and mix well with a spoon.
Pour the coconut milk into a small bowl and dip the ladyfingers.
As you soak them, arrange the ladyfingers in the baking dish. Once you have done a first layer of ladyfingers, cover with a layer of coconut cream, leveling the surface.
Dip the cookies again in the coconut milk and make another layer in the baking dish.
Cover with the mascarpone and coconut cream and level the surface.
Decorate the surface with shredded coconut and refrigerate for 30 minutes.
