Potato Sandwich

The potato sandwich is a tantalizing and very tasty recipe. It can be served both as an appetizer and as a main course.
Thanks to the porcini mushrooms, the aroma that fills the house makes you savor the deliciousness of this dish. You get a sense of autumn, the smell of plants and wet leaves. Mushroom picking is a common passion in my area as a few kilometers from the sea, there are wonderful woods surrounded by small lakes where you can easily swim in the summer…

Porcini are rich in vitamin D and protein and include all 20 amino acids. They are very good and offer health benefits, but be careful not to consume them in excessive quantities, as they can cause intoxication.

Ingredients

  • 3 potatoes
  • 8.8 oz porcini mushrooms
  • 1 smoked scamorza cheese
  • 2 cloves garlic
  • to taste parsley
  • to taste salt
  • to taste extra virgin olive oil

  • 1 Pan
  • 1 Baking tray
  • 1 parchment paper

Steps to create the potato sandwiches

Peel the potatoes and slice them thinly using the mandoline. Preheat the oven to 356°F. Line a baking tray with parchment paper and place the salted potato slices on it, baking for 15 minutes at 356°F.

Meanwhile, clean the porcini mushrooms and chop them into small pieces. In a pan, sauté the garlic with the oil. Remove the garlic and add the mushrooms, cooking them (about 8-10 minutes) over low heat with a lid. Finally, add the chopped parsley.

Cut the smoked scamorza cheese into slices.

Once cooked, remove the potatoes from the oven and add the cheese, mushrooms, and another potato slice to create your sandwich.
Return to the oven for 3-5 minutes and serve hot… enjoy the taste! ☺️
