STUFFED ZUCCHINI CUTLETS the simplest and fastest to prepare

Stuffed zucchini cutlets with cooked ham and melted cheese baked in the oven. Even though I’m already starting to think about autumn recipes with seasonal vegetables, I still like to prepare a few recipes with my beloved zucchinis. I was gifted some large zucchinis and immediately thought of preparing them stuffed and baked in the oven. A zucchini recipe that is simple and quick that my family loves. Few and simple ingredients for a rich side dish or a second course that wins over everyone at the table, even those who do not particularly like zucchinis. For the filling, I used slices of cooked ham and slices of scamorza cheese, but you can vary the filling according to your taste and maybe also what you have at home. Ingredients for Oven-Baked Stuffed Zucchinis

  • 1.1 lbs zucchini (large)
  • 3.5 oz cooked ham
  • 7 oz scamorza (thin slices)
  • 1/2 cup grated parmesan
  • 3 tbsps breadcrumbs
  • to taste extra virgin olive oil
  • to taste salt

How to Prepare Stuffed Zucchini Cutlets

  • To prepare this recipe, I used large zucchinis, but you can also use medium-sized zucchinis and maybe slice them lengthwise. Wash the zucchinis, trim the ends, and cut them into thin slices.

  • Arrange half of the zucchini slices on a baking sheet lined with parchment paper and lightly salt them. Place a slice of cheese and then a slice of cooked ham on each slice. Close with another slice of zucchini, pressing lightly.

  • Lightly salt the zucchinis on the surface. On each, place about half a teaspoon of grated parmesan and half a teaspoon of breadcrumbs. Add a drizzle of extra virgin olive oil.

  • Bake the Stuffed Zucchini Cutlets in a preheated oven at 375°F in static mode for 20-25 minutes. If you prefer, you can also cook them in an air fryer at 375°F for 18-20 minutes.

If any Stuffed Zucchinis remain, store them in a container in the fridge for 2 days

If you prefer to make a vegetarian version, you can simply omit the cooked ham
