Russian Salad Baskets

Russian salad baskets are part of the appetizer category, in this period, I would add “Christmas,” but they can be prepared in any season. I adopted this version, with Parmesan baskets, because I always like to surprise my guests by combining tradition with innovation. Moreover, this Russian salad is dressed with the amazing vegan mayonnaise, which I love! When I think of this dish, I remember the Christmas lunches I used to have with my grandparents when I was little. Sure, back then, it was dressed with tons of traditional mayonnaise and was anything but light… but it wasn’t Christmas without it on the table.

Ingredients for the Russian salad

Let’s see what they are

  • 4 potatoes
  • 5 medium carrots
  • 1.5 cups frozen peas
  • 2 hard-boiled eggs
  • 5.3 oz canned tuna in water
  • 6 tablespoons grated Parmesan cheese
  • 1.7 cups vegan mayonnaise
  • 5 pickled gherkins
  • to taste salt

  • 1 Steamer
  • 1 Frying pan
  • Parchment paper
  • 1 Mold round
  • Saucepans

Steps to create the Parmesan baskets

Take a frying pan and heat it. Meanwhile, cut the parchment paper into 6 squares and place a tablespoon of grated Parmesan cheese on each. When the pan is hot, add one at a time, melting the Parmesan. Once melted, place it in the round mold, gently shaping it into a basket and let it cool (see photo).

Peel the potatoes and carrots, cut them into large pieces, and steam them. At 3/4 of the cooking time, add the peas. Once cooked, let them cool.

Next, cut the carrots, potatoes, and pickled cucumbers into small regular pieces in a bowl and add the hard-boiled eggs, also cut into small pieces, the tuna, and peas. Add salt and season with the vegan mayonnaise.

At this point, take the Parmesan baskets and fill them with our delicious Russian salad.

Garnish with a slice of hard-boiled egg and serve… enjoy your meal 🙂
