Ingredients for Potato and Carrot Patties
- 10 oz zucchini
- 14 oz potatoes
- 6 oz carrots
- 1.4 oz grated Parmesan cheese
- to taste salt

How to make Zucchini and Carrot Fritters
Peel the potatoes and let them cook in water for about 30 minutes. Check the potatoes’ doneness by piercing them with a fork. The cooking time depends on their size and quality, so adjust accordingly.
Wash the zucchinis and peel the carrots. Grate both the zucchinis and carrots with a coarse grater into a bowl. Mash the boiled potatoes using a potato masher. Combine the carrots and zucchinis with the potatoes.
Add a pinch of salt, chopped parsley, and grated Parmesan cheese. Mix well using a fork or your hands. Form the fritters: take some mixture into your hands, compact it, and then flatten it slightly.
Place the zucchini fritters as you prepare them on a baking sheet lined with parchment paper, side by side. Lightly oil the surface.
Bake the Carrot and Zucchini Patties in a preheated oven at 375°F (190°C) for 20-25 minutes. If you prefer, you can cook them in an air fryer at 375°F (190°C) for 16-18 minutes.
