Eggplant Parmesan
A very famous traditional Neapolitan recipe that we all love! As it often happens, everyone modifies it according to their own taste! I decided to offer you my version as well, but I already know that I will be criticized 😂 because I add bacon to the sauce, which is not in the traditional recipe. However, I like it that way! If you want a lighter version, instead of frying the eggplants you can simply grill them!

Ingredients for the Eggplant Parmesan:
- 2 eggplants
- Half onion
- 3 cups tomato sauce
- 3.5 oz bacon
- basil
- seed oil
- 10.5 oz mozzarella
- 1.75 oz parmesan cheese
Steps:

In a pan, we put a bit of oil, onion, and bacon and let them sauté. Add the tomato sauce, some basil, and let it cook for about 30 minutes.
Stir occasionally. Meanwhile, slice the eggplants thinly and fry them in hot oil for a few minutes. Let them drain on a paper towel.
Assembly:
Put a layer of sauce
Add a layer of eggplants, another layer of sauce, some mozzarella (drain it for a few hours). Add some parmesan on top.
Continue alternating the layers. In the oven at 375°F for about 40 minutes.
