Creamy Asparagus Pasta
A seasonal first course made with wild asparagus (in my case) and a mix of spices and cheese to achieve a delicious and very creamy pasta. As soon as the first asparagus comes out, I immediately go for a nice walk in the woods and bring home a bunch, I love them! I’m happier if I receive a bunch of asparagus than flowers 😂 In the past, I’ve also suggested other types of pasta with asparagus like: Asparagus and Salmon Pasta, Asparagus and Bacon Pasta, Clams and Creamy Asparagus Pasta or Asparagus and Ricotta Crepes, etc.

Ingredients for creamy asparagus pasta:
- 7 oz asparagus
- 3.5 oz cream cheese
- salt
- Half onion
- garlic
- olive oil
- 1.35 oz vinegar
- pepper
- 7 oz pasta
- pecorino (Grated)
Steps
The preparation of creamy asparagus pasta is very simple and quick, watch the video HERE.
In a small pot, put some water, salt, and vinegar, add the cleaned and washed asparagus and cook them for about 7 min. After about 7 min, drain them.
Blend them with an immersion blender. In a pan, put some oil, chopped onion, and garlic.
Sauté them. Add the blended asparagus, a little hot water, and the cream cheese.
Meanwhile, cook the pasta, drain it, and add it to the sauce. Mix well. Serve with some grated pecorino on top and black pepper.
