BERRY AND JAM CAKE the best you’ve ever tasted

Soft, fluffy, and delicious Berry and Jam Cake. The recipe I want to share with you today is for a very soft and fluffy cake to which I have added lots of sweet berries and berry jam. A Berry Cake that filled my house with its delightful aroma in no time. For the berries, you can use a mixed variety as I did, or just one type or more, and if you can’t find fresh ones, you can also use frozen ones, but make sure to thaw and drain them well. A simple batter that’s easy to prepare and super soft, the addition of jam makes it even better. Ingredients for the Soft Berry Cake

  • 2 eggs
  • 1/2 cup oz sugar
  • 1 1/2 cups oz flour
  • 2 cups oz berries
  • 1/4 cup oz vegetable oil
  • 1 container plain yogurt (or berry flavored)
  • 1 cup oz berry jam
  • 1/2 packet baking powder (8 grams)
  • to taste powdered sugar (for decoration)

How to Prepare the Berry and Jam Cake

  • Beat the 2 whole eggs with the sugar using an electric mixer for about 8 minutes until a light and frothy mixture is achieved. Add the vegetable oil and a container of plain yogurt. Mix well.

  • Add the sifted flour and baking powder to the batter. Mix well. Finish the preparation by adding the washed and drained mixed berries to the batter. Gently fold them in with a spatula.

  • Line a rectangular mold of 8.7 x 11 inches with parchment paper. Pour the batter into the mold, leveling it with a spatula. Using a teaspoon, add small dollops of berry jam all over the surface.

  • During baking, the jam will sink into the batter, making the Cake irresistible. Bake the Berry and Jam Cake in a preheated static oven at 350°F for 35-40 minutes.

  • Always do the toothpick test to check the baking even inside the cake. Let the Cake with Jam cool before transferring it to a tray and decorate it as desired with powdered sugar.
