Ingredients for 15 Cheese Bites
- 30 small crackers (like Ritz)
- 3.5 oz robiola cheese
- 2.8 oz spreadable goat cheese
- 0.35 oz Pecorino Romano cheese
- black pepper
- poppy seeds
Tools
- 2 Small Bowls
- 1 Grater
Preparation of Cheese Bites
Place the robiola cheese, spreadable goat cheese, grated Pecorino, and a generous grind of black pepper in a small bowl. Mix until you obtain a smooth cream.
Spread a bit of this cream on one cracker and cover it with a second cracker forming a sort of small sandwich.
Press slightly to squeeze out the excess cheese and remove it with the tip of a teaspoon or a small spatula.
Continue in this way until all the ingredients are used up.
Pour some poppy seeds into a small bowl or dish and dip the cheese bites on one side only so that part remains white.
Arrange the cheese bites on the serving plate and serve them quickly to prevent the filling from moistening the crackers, causing them to lose their crunchiness. Enjoy! Paola
