Midnight Spaghetti

Ingredients for Midnight Spaghetti

  • 12.3 oz spaghetti
  • 1 red onion (medium-small)
  • 12.3 oz tomato puree
  • 2.5 oz caciocavallo cheese
  • A few leaves basil
  • 1 pinch baking soda
  • extra virgin olive oil
  • salt

Preparation of Midnight Spaghetti

  • Peel the onion and slice it into strips.

  • In a large pan, heat a few tablespoons of oil before adding the onion.

  • Let it sizzle for a moment then add the tomato pulp, a generous pinch of salt, a pinch of baking soda (to eliminate the acidity of the tomato) and a few basil leaves torn by hand.

  • Continue cooking for 15 minutes over low heat, stirring occasionally with a wooden spoon.

  • In the meantime, shred the caciocavallo cheese into thin strips using a grater with large holes.

  • Cook the spaghetti in plenty of salted water, drain them al dente and transfer them to the pan with the sauce. Stir first, then add the caciocavallo cheese.

  • Mix in the cheese, then distribute the midnight spaghetti onto individual plates and serve immediately, piping hot. Enjoy! Paola
