During cooking, to move the sole fillets, I recommend using a plastic kitchen spatula (which can be used on non-stick utensils) to avoid breaking them and to plate them whole.
To accompany the Mediterranean sole, I prepared a mixed salad with fresh spinach, endive, and radishes, all seasoned with simple salt and pepper.
If you like, you can also add caperberries, which will give an extra touch to the recipe!
