During cooking, to move the sole fillets, I recommend using a plastic kitchen spatula (which can be used on non-stick utensils) so as not to break them and to be able to plate them whole.
To accompany the Mediterranean sole, I prepared a mixed salad with fresh spinach, endive, and radishes all seasoned with simple salt and pepper.
If you like them, you can also add some caper flowers, they will give an extra touch to the recipe!
