caramel triangle without eggs
A mimosa cake in a triangular shape with a base made of flour and cream, filled with caramel cream and enriched with a bit of peanuts. A very simple recipe to prepare and great to serve as a dessert at the end of a meal and more.

Ingredients for caramel mimosa triangle (eggless):
14×14 inches
- 1 1/4 cups all-purpose flour
- 2 tsp honey
- 1/2 cup sugar
- 1 cup heavy cream
- 1 tsp baking powder
- 3/4 cup sugar
- salt
- 1/4 cup butter
- 1/2 cup liquid cream
- 1 cup whipped cream
- as needed peanuts
- 1 1/2 tbsp butter
- 1 cup breadcrumbs
- 1/4 cup sugar

Base preparation:
In a bowl, put honey, sugar, and cream, and slightly whip. Gradually add the flour and mix well. If the mixture is too hard at the end, put it in the microwave for a few seconds.
Place it in a baking tray lined with parchment paper, spread and level it. Bake for about 10 minutes at 375°F.
Cream preparation:
Caramelize the sugar.
When it completely melts and reaches the desired color, add butter and salt and let dissolve. Add the cream gradually while stirring. Once the caramel is ready, transfer it to a bowl and let it cool a bit. Flip the base and remove the attached parchment paper.
Trim the edges, then cut into strips of the same size. Mix the caramel with the whipped cream. Spread about 3/4 of the obtained cream over the base.
Spread and level it. Add some peanuts on top. Roll the first strip and place it at the center of the plate.
Cut the other strips into pieces and place them around, maintaining the triangular shape. Cover the entire surface with the remaining cream. Melt the butter, then add the breadcrumbs.
Cook for a few minutes. Add the sugar and cook for a few more minutes. Turn off the heat and let it cool, then cover the entire cake. Cut the edge trimmings into cubes.
Place them on top. Add a bit of peanuts. Refrigerate for a few hours.
