Today I present you a blackberry pudding that’s very easy to prepare thanks to the use of chia seeds. They’re the ones that work all the magic. It will be perfect for a healthy and filling breakfast or snack. This is not only because the ingredients are all wholesome but also because chia seeds have extraordinary beneficial properties. On this topic, I invite you to click HERE to read a short article I wrote about it.

Ingredients for the blackberry pudding
Those following a vegan diet can substitute cow’s milk with a plant-based milk (such as almond or oat) and honey with maple or agave syrup.
- 2.8 oz blackberries
- 2 tbsps chia seeds
- 1 tbsp honey
- 1/2 cup milk
- 1/2 cup yogurt
- A few blackberries (for decoration)
Tools
- 1 Bowl
- 1 Pestle
Preparation of the blackberry pudding
Wash the blackberries under running water, pat them dry with kitchen paper, and place them in a bowl. Then mash them with a fork or a pestle. It’s not necessary to completely turn them into puree. If there are small pieces of blackberry left, it won’t be a problem.
Now add the chia seeds, honey, and milk, and mix carefully until all the ingredients are perfectly combined.
Let the blackberry pudding rest for about half an hour at room temperature. You’ll notice that gradually, the chia seeds will swell and the consistency of the pudding will begin to thicken.
At this point, cover the bowl and transfer it to the fridge for a few hours (even overnight if you want to have the blackberry pudding for breakfast).
When you’re ready to enjoy the blackberry pudding, mix in the yogurt. You can use plain yogurt or one flavored with vanilla or berries. Finally, decorate it with whole blackberries. Enjoy! Paola
