Spaghetti Frittata

Have you ever tried spaghetti frittata? It’s a quick and tasty preparation that allows us to recycle leftover pasta. Even if it’s already seasoned. In the one I propose today, for example, I used tomato spaghetti that I had prepared thinking both my children would be at the table. Instead, at the very last (or rather extremely last) moment, one of them informs me they won’t be coming home. That’s when I wish I loved yoga instead of being engulfed in flames. The pasta is ready. It’s too much. There’s leftover. And I propose it to you in another form. There you go! Of course, you can also think of preparing the frittata by purposely boiling some spaghetti if you don’t have any leftover. It will still be delicious.

Ingredients for Spaghetti Frittata

  • 6 eggs (medium)
  • 1 onion (about 2.5 oz net weight)
  • 1 bunch parsley
  • 1/3 cup Grana Padano cheese, grated (or Parmesan)
  • 9 oz spaghetti (cooked, even seasoned)
  • extra virgin olive oil
  • salt
  • black pepper

  • 1 Pan

Preparation of Spaghetti Frittata

  • Crack the eggs into a large bowl, add a pinch of salt and a grind of black pepper, and beat them with a small hand whisk until the yolks and whites are combined.

    Wash and chop the parsley.

  • Add the onion and parsley to the eggs and mix.

  • Then add the grated cheese and mix again.

  • Finally, add the spaghetti and mix all the ingredients well.

  • Heat a pan lightly greased with oil and pour in the egg mixture, distributing it evenly. I used a double frittata pan because otherwise, I’d make a mess. If you want to buy it, you can find it by clicking HERE.

  • Cook the spaghetti frittata over low heat until the top starts to set; then flip it and cook on the other side.
