Steps
To prepare the cod fillet gratin with tomato…
First, take the cherry tomatoes, wash them, and place them in the chopper then chop them intermittently for a few seconds.
With the help of a fine-mesh sieve, strain the chopped tomatoes, separating the pulp from the liquid using two distinct bowls.
In the bowl with the tomato pulp, add the breadcrumbs and season with garlic powder, a few basil leaves torn by hand, extra virgin olive oil, salt, and pepper. Mix well.
Now take the fresh cod fillet (already cleaned), place it on a slightly greased baking dish, and cover the surface of the cod with the tomato and breadcrumb mixture just prepared.
Bake the cod in a preheated oven at 356 degrees and cook for 25/30 minutes in fan mode. Serve hot.
