Ingredients

  • 1.75 cups all-purpose flour
  • 3.5 tbsp lard (or butter)
  • 6 tbsp water
  • 1 pinch salt
  • 1 pinch pepper
  • 2 eggs
  • 4.5 oz sausage (dry)
  • 7 oz caciocavallo cheese
  • 5.25 oz fiordilatte cheese
  • 1 tbsp grated Parmesan cheese
  • 1 tbsp pecorino cheese
  • 0.35 oz pine nuts (optional)
  • 0.7 oz raisins (optional)
  • salt
  • pepper

Steps

  • Prepare the base dough: pour the flour into a bowl, add the lard, salt, a pinch of pepper if you prefer, and the water.

  • Mix and work the ingredients well, move to the floured work surface, and knead the dough until smooth and homogeneous.

  • Divide the dough into two parts, roll one half out into a 4-9 inch baking dish.

  • Cut the sausage into pieces or crumble it, cut the cheeses and place them in a bowl, add the eggs, pecorino, Parmesan, salt, and pepper, and mix everything.

  • Pour everything into the baking dish and cover with the other dough, seal well, prick with a fork, then brush with oil and bake in the preheated oven at 356°F

  • Bake for 25 minutes or in an air fryer at 347°F for 15 minutes, then turn and cook the bottom for another 5 minutes.
