Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 cup water
- 1 teaspoon salt
- 1 tsp fresh yeast
- 3 tablespoons extra virgin olive oil
Steps
Depending on the temperatures, the rising times vary, if you need it in the evening add a few grams of yeast.
Dissolve the yeast in the water.
Pour the flour into a bowl, add a tablespoon of oil, the yeast and mix, finally add the salt and knead well.
Place the dough in a food bag or cover it in a bowl with plastic wrap and let it rest for a couple of hours.
Take back the dough, form a rectangle with the short side towards you, fold one side towards the center and cover with the other side, reform the ball and let it rest for an hour or two.
After the time has elapsed, take the dough and spread it in a round pan of about 9 1/2 inches, if you want it very thick use a 8 2/3 inches pan, if you like it thin a 10 1/4 inches pan is fine.
Oil the surface and with your fingertips form dimples in the dough, add rosemary or oregano, and let rest for 20 minutes.
Turn on the oven to 482°F or higher, if your oven reaches 572°F.
Once it reaches the temperature, lower to 482°F, bake and cook for 10 minutes then lower the temperature to 428°F and cook for another 5 minutes approximately.
