Cold Pasta with Zucchini and Feta

Cold pasta with zucchini and feta is a flavorful and light main course, perfect to prepare in advance and enjoy cold. Ideal cold pasta for summer lunches and dinners. Perfect for enjoying at the beach under the umbrella or bringing to the office for lunch break. Preparing cold pasta with zucchini is really easy, just cut the zucchini into small cubes, and season with salt and lemon juice. Mix and let marinate for 30 minutes: this way the zucchini will cook thanks to the salt and lemon.

After 30 minutes of resting, just season with extra virgin olive oil, celery, feta… and the previously cooked pasta, mix everything well and our dish is ready.

Ingredients

  • 2 zucchini
  • 4.23 oz feta
  • 3.53 oz cherry tomatoes
  • 1.76 oz olives
  • 1 stalk celery
  • 1 lemon
  • mint (or basil)
  • 7.76 oz pasta
  • salt
  • pepper

Steps

Let’s start preparing

  • Let’s start preparing the Cold Pasta with Zucchini and Feta; wash and dry the zucchini, cut them lengthwise and then cut each half into two parts.
    Cut again into strips to create small cubes.
    Pour the zucchini into a bowl and add the salt and lemon juice, mix and let rest for half an hour.

    After half an hour, use a colander to remove all the excess water that has come out.

  • Put a pot of lightly salted water on the stove to cook the pasta. Once ready, run it under cold water to stop the cooking and prevent it from becoming overcooked.

  • At this point, pour the pasta into a large salad bowl and add the zucchini and feta cut into cubes, the celery stalk in cubes, the tomatoes in pieces, and the mint.
    Season with extra virgin olive oil and pepper. A nice mix and you’re ready to serve.
