Ingredients for the Potato Omelette:
- 3 potatoes (Large)
- 3 eggs
- olive oil
- 1.75 oz Parmesan cheese
- garlic powder
- salt
- oregano
- rosemary

First, clean, wash, and cut the potatoes into pieces. In a pan, add a bit of oil, add the potatoes, some oregano, rosemary, garlic powder, and salt.
Cook for about 15 minutes, stirring occasionally. Meanwhile, in a bowl, add the eggs, a bit of salt, and beat with a fork.
Add the Parmesan cheese and mix. Pour the obtained mixture over the potatoes. Cover and cook for about 10 more minutes. Detach the edge with a spatula if necessary.
Turn it over using a lid or a plate. Cook for another 7 minutes.
