A very simple recipe that can easily be made by hand, these super soft fried yogurt donuts will please everyone and if you don’t want to fry them, just use an air fryer or bake them.

Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/4 cups cake flour
- 1 egg
- 1/4 cup sugar
- 1 pinch salt
- 1/2 cup plain yogurt
- orange zest
- lemon zest
- 1/4 cup butter
- 3 1/2 tbsp milk
- 2 tbsp all-purpose flour (if needed!)
- 3 1/2 tbsp orange juice
- 2 tsp fresh yeast
Steps
Dissolve the yeast in a bit of milk, taken from the total needed for the recipe, at room temperature.
Chop the citrus zests with sugar, add the egg and yogurt, and mix well.
Pour the flour into a bowl, add the yeast, the entire mixture of eggs, sugar, yogurt, and aromas, and mix.
Add the softened butter in pieces and start kneading.
Add the salt, orange juice, and milk gradually until you get a soft but not too sticky dough; if no more milk is needed, do not add it.
If you’re using a mixer, you might need to reduce the amount of milk.
Take the dough, move to the work surface, form a rectangle with your hands, and bring the short side to the center, cover with the other short side, turn the dough, form a ball, and let it rest in a bowl covered with plastic wrap.
Let the dough rest for 2 hours, then take it and repeat the folding process again and let it rest for another hour.
After the time has passed, take the dough and divide it into 6 or 8 pieces, as you prefer.
Place the donuts on individual pieces of parchment paper and cover with a cloth for 20 minutes (you can let them rest in the turned-off oven).
Heat plenty of oil in a pan or saucepan and drop the donuts one or two at a time with all the paper, which will come off immediately when in contact with the oil.
Cook until golden on both sides. If the oil becomes too hot, lower or turn off the heat, which should remain medium-low, let the temperature drop, then turn it back on.
If the oil is too hot, you risk cooking them too much outside and not enough inside.
Drain on kitchen paper and roll in granulated sugar.
