Sicilian Eggplant Bundles
I’m sure you’ve never tasted them this good.
Great as an appetizer for an aperitif or even as a main course.
They’re easy to make, and the novelty is you can also skip frying the eggplants, because I’ll explain how to bake them sliced in the oven without frying anything.
You can then complete the second cooking either in a conventional oven or in a combination microwave.

- 2.2 lbs eggplants (medium)
- 3.5 oz prosciutto
- 3.5 oz primosale (or provola cheese of choice)
- 1 cup breadcrumbs (Sicilian seasoned)
- 17.6 oz tomato sauce
- to taste salt
- to taste pepper
- to taste basil
- to taste extra virgin olive oil

Steps
To make
Start with the preparation of the eggplants. Wash them, remove the stalk, and slice them not too thinly.
For this recipe, you should obtain 3 slices per serving for a total of at least 12 slices for 4 servings.
Place the eggplants on a baking tray with parchment paper, and brush them with evo oil, salt, and pepper.
Turn on the grill of your oven to 392°F and cook them for about 15 minutes. Then take them out and let them cool slightly
Meanwhile, prepare the Sicilian seasoned breadcrumbs following my recipe, Click here.
Slightly moisten the breadcrumbs with 2 tablespoons of water and 1 of evo oil.
Cut the prosciutto and provola cheese.
Place the first 4 slices on the tray,
now put a heap of breadcrumbs on the first slice,
followed by a little prosciutto,
and then the thinly sliced primosale or provola cheese.
At this point, cover with the second slice and start over again,
first the breadcrumbs, then the prosciutto, and finally the provola cheese.

Cover with the third slice
Now, in a baking dish or ovenproof dish pour the tomato sauce, salt, oil, and basil.
Mix and lay the bundles
Place a piece of provola on each bundle, and sprinkle with basil leaves.
Cook in the microwave for 10 minutes at 650W micro-grill, or in a regular oven for 10 minutes at 392°F grill.
Serve warm or better at room temperature. The Sicilian Eggplant Bundles are ready.
