GENGA LAMBS with dried fruit, sweets for Epiphany, very simple and delicious, typical recipe from Marche, stuffed cookies with marmalade, fruit, and sapa.
The Genga lambs are a typical sweet from Marche prepared during the Epiphany period, they should be shaped like a lamb or Epiphany witch, it’s not easy to remake them without a mold and it would take a bit of time, so mine are simple ravioli or half-moons.
The recipe for Genga lambs is quite simple, dried fruit is not lacking at home during this period, and fortunately not the sapa, which I adore, so it didn’t take much to make them, I only missed apple marmalade and mistrà which I replaced with orange marmalade and lemon juice.

Ingredients
- 2 cups all-purpose flour
- 2 eggs
- 1/4 cup sugar
- 2 tbsp lard (or butter)
- 1/2 packet baking powder
- lemon zest
- as needed mistrà (or lemon juice)
- 1/2 cup marmalade (apple, I used orange)
- 1/3 cup raisins
- 1/3 cup almonds
- 1/3 cup dried figs
- 1/3 cup walnuts
- 1 cup apples
- 1/2 cup cooked wine (or sapa)
- 1 pinch ground cinnamon
Steps
Prepare the dough by mixing the flour with baking powder, lard, sugar, lemon peel, egg, mistrà (or lemon juice) and hot water if needed.
Gather the dough and let it rest for 30 minutes in the fridge.
Chop all the dried fruit with a knife into small pieces, also cut the dried figs and apples.
Pour these last ingredients into a bowl, add the sapa and the marmalade, mix well.
Take the dough, divide it into two parts, roll it out not too thin because it might tear, so about 1/8 inch thick.
Place the filling in small mounds on one sheet, then lay the other sheet on top and cut them like ravioli, it’s the simplest and fastest way.
Seal the filling well by pressing around it with a finger, then mark with a fork.
The typical shapes of these stuffed cookies are those of lambs or Epiphany witches, you need to cut them out with a knife or molds.
Make cuts on the ravioli, brush with a yolk and bake in a hot oven at 350°F for about 20 minutes until golden.
