Ingredients

  • 1 3/4 cups water
  • 2 teaspoons sugar
  • 0.7 oz fresh yeast
  • 5 3/4 – 6 cups flour
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons salt
  • tomato to taste
  • 8.8 oz mozzarella

Steps

  • Start preparing the sheet pizza by making the dough.

  • Pour the lukewarm water into a bowl with the sugar, add the yeast and dissolve it.

  • Gradually add the flour.

  • Add oil and salt.

  • Knead briefly and let it rest for 15 minutes covered.

  • Take the dough and make folds.
    Make folds 3 times with a 20-minute interval between each series of folds.

  • Spread the dough with your hands and fold it over itself first from one side and then from the other.
    Repeat 2 more times.

  • Cover it each time and let it rest.

  • After letting it rise for a couple of hours, oil the parchment paper and place the dough on it.

  • Spread it with your hands and cover with plastic wrap, let it rise for 30 minutes.

  • Season it with tomato oil and salt.

  • Give a first bake in the oven for 20 minutes then add the mozzarella and bake for another 5 minutes.
