Ingredients for Tuna Potatoes
- 1.65 lbs potatoes
- 7 oz mayonnaise
- 2.8 oz tuna in oil (drained weight)
- 0.7 oz capers
- 0.35 oz anchovies (anchovy paste)
- to taste chives
- to taste water (for cooking the potatoes)

Preparation of Tuna Potatoes
First, we need to cook the potatoes. We can use a pressure cooker, a classic saucepan with water, or use the Bimby or microwave.
I used the MICROWAVE. We take the potatoes, wash them, and place them in the appropriate steamer (photo n.1). Pour water underneath, and place the whole potatoes on the tray. Close with the lid and cook for 10 minutes, selecting “steam cooking”. At the end, check with a fork if they are cooked (photo n.2), start peeling them, then set them aside to cool and finally cut them into pieces (photo n.4).
Alternatively, WITH BIMBY: If using the Bimby, peel the potatoes and cut them into not too large pieces. Place them in the basket (photo n.3) and pour 13.5 oz of water into the bowl. Place the basket inside the bowl, close with the lid, and set 20 minutes, Varoma temperature, speed 1. Once cooked, set them aside to cool.
1 – Once we have placed the cold, cut potatoes in a bowl, we can prepare the dressing
2 – In a blender, place the capers, drained tuna, and anchovy paste (or anchovy fillets)
3 – Add the mayonnaise and blend everything.
4 – We must obtain a smooth, homogeneous cream.
5 – Then, pour the sauce over our potatoes and add some chopped chives. Mix everything and serve.
Notes
For a lighter dish, we can replace mayonnaise with ricotta
Instead of chives, we can use chopped parsley
It keeps in the fridge for a couple of days
