Ingredients

  • 12 puffs
  • 5.3 oz ricotta
  • 0.4 oz butter
  • 0.5 oz grated Parmesan
  • 2 tbsps all-purpose flour
  • 0.63 cup cooking cream
  • pepper
  • salt

Steps

  • Melt the butter in a small pot, add the flour and stir with a hand whisk, add the cream and Parmesan, mix well.

  • Add salt and pepper to taste and stir.

  • Work the ricotta in a bowl and add half of the cheese cream, mix again, if needed add a bit more ricotta.

  • Add the diced bacon, cut the puffs and fill them with the cream, arrange them on the serving plate and cover with the rest of the cheese cream.

  • Garnish with pepper and chives, and serve.
