Ingredients
- 3 egg yolks
- 1 teaspoon cooked wine (or 3 tbsps of Marsala, rum, sparkling wine, dessert wine)
- 1.6 oz sugar
- 4.4 oz mascarpone
- 4.4 oz 0% fat Greek yogurt (or heavy cream)
- 2 tablespoons pistachio paste
- pistachio crumbs
- 1.4 oz sugar (for the mascarpone)
Steps
Prepare the zabaglione, work the sugar with the yolks in a saucepan with a hand whisk.
Put water in a pot and heat it, then move the saucepan for bain-marie cooking, and continue stirring on low flame.
Add the cooked wine or sparkling wine a little at a time while continuously stirring until it becomes foamy, be careful not to overheat.
You need to work with the whisk for 4-5 minutes, not more.
Mix the mascarpone with yogurt and sugar, stir well, add the pistachio paste and mix thoroughly.
Decorate the cups with pistachio crumbs, then pour the two creams, alternating them or creating just two layers, garnish with pistachios and red fruits.
Store in the fridge for at least 30 minutes.
