Wash the eggplant well, check for any bruises or brown peeling, dry them well with a cloth, and then remove the stem.
For this preparation, it is not necessary to peel the eggplants.
With a sharp knife, cut 7 or more slices (depending on the size of the eggplant) about 0.6 inches thick; for convenience, we cut each eggplant into three parts, but you can alternatively leave the slices whole.
