Sicilian Eggplant Rolls

It’s true! At first glance, they immediately remind you of eggplant Parmesan, but these rolls differ slightly due to the use of fresh mozzarella and cooked ham. Ingredients that, more or less, everyone likes and allow you to revisit a classic to vary from the traditional counterpart.

The Sicilian eggplant rolls are delicious bites that will remind you of the taste of eggplant Parmesan but in a different guise! Regardless of everything, they are very easy to make without too many steps or any particular skills. Then, if you accompany them with some toasted bread, they become even more delicious and satisfying!

Personally, I love eating them when they have rested, when their temperature is close to warm, but I love them even more the next day taken from the fridge. So try them, follow the recipe, and amaze your guests at home!

Ingredients

For the Sicilian eggplant rolls

  • 1 Sicilian black eggplant
  • to taste seed oil
  • 1 pinch salt
  • a few slices fresh mozzarella
  • 200 g sliced prosciutto crudo
  • 500 ml seasoned tomato sauce
  • a few fresh basil leaves
  • 2 tablespoons grated Parmesan cheese
  • a few slices of bread

Steps

To make the Sicilian eggplant rolls

  • Cut thin slices from the eggplant using a mandolin or by hand, then fry them in hot oil, being careful not to burn them

  • As you go, place the fried eggplant slices on a tray with paper towels and lightly salt them

  • Meanwhile, cut the fresh mozzarella into strips creating rectangular blocks

  • At this point, take an eggplant slice and cover its entire surface with a slice of prosciutto crudo

  • Add a piece of fresh mozzarella and roll everything up, creating the roll (do the same for all the eggplant slices)

  • Next, season the tomato sauce to your taste by enriching it with salt, oil, and if you want, a bit of sugar to remove the acidity

  • At this point, put a layer of sauce on the bottom of a baking dish and place all the rolls on it, covering them entirely with the seasoned tomato sauce, and finally sprinkle abundantly with grated Parmesan cheese

  • To complete, cook in an air fryer for 15 minutes at 356°F or in the oven at the same temperature for about 25 minutes

  • Finally, serve on a plate accompanied by toasted bread or other preferred types of baked goods

Tip!

Let the rolls rest out of the oven for at least 20 minutes before consuming. If there are leftovers, store them in the fridge for up to 2 days.
