Delicious almond paste pinch cookies, delightful treats made with almonds and sugar, without any added fats and they are very soft and indulgent, the perfect sweet to give as a gift for Christmas.

The recipe for almond paste pinch cookies is very simple, chop the almonds with the sugar then add an egg white and mix everything together creating balls that are rolled in sugar and pinched before baking.

I find it a really indulgent dessert, I love almonds, and these pastries are a true delight, perfect to serve with tea or a nice cup of coffee.

ALMOND PASTE PINCH COOKIES

Ingredients

  • 4.6 oz almonds
  • 1.1 oz almond flour (if needed)
  • 1 egg white
  • 4.4 oz sugar
  • 2 drops bitter almond essence

Steps

To decorate the pastries, I used granulated sugar blended in a mixer, a useful idea if you don’t have powdered sugar.

  • Place the almonds in a mixer, also add the sugar and blend well.

  • Pour them into a bowl, add the almond essence, the egg white and mix with a spoon, if the dough is too wet add the almond flour.

  • The dough should be more or less firm or not too soft otherwise the pastries will spread.

  • Make balls, roll them in powdered sugar and pinch them on top.

  • Place them on a baking tray lined with paper and bake in a hot oven at 356°F for 10 minutes then lower to 338°F and bake another 3-5 minutes.

  • Remove from oven and let cool.
