Creamy Lentil and Barley Soup

Ingredients

  • 10.5 oz lentils
  • 1 cup barley
  • 2 carrots
  • 1 small onion
  • 1 bouillon cube (homemade)
  • 3/4 cup tomato puree
  • 4 cups water

Steps

  • Dice the carrots and onion

  • Sauté in a pot with a drizzle of oil.

  • Add the tomato and a pinch of salt

  • Add the barley and lentils.

  • Dilute with water and the bouillon cube.

  • Cook with the lid slightly ajar for about 40 minutes.

  • If desired, season with a drizzle of raw olive oil and optionally serve with croutons.
